# Our Farm — NativeRoots, Salem

Over a hundred trees in Salem. Senthoora and Totapuri. Picked at dawn and ripened the old way — in paddy hay, no shortcuts.

## The orchard

A family farm in Salem, Tamil Nadu, where farming has been a way of life for generations. Our orchard is home to over a hundred mango trees. Many are still in their early productive years.

## The harvest

Our primary season runs April – June, when the fruit naturally reaches peak flavour and sweetness.

## The process

1. **Harvested at the start of the week.** Every mango is hand-picked at the right stage of maturity and inspected before ripening begins.
2. **2–3 days in vaikkol (paddy hay).** Placed in covered containers with paddy hay — a method our farming family has used for generations. No gas, no carbide.
3. **Sorted, packed, dispatched.** Once ripe, each fruit is sorted and packed fresh. No long-term cold storage.

No carbide. No ethylene. No wax. No cold storage.
